Kathal (Jackfruit) ki sabji, a quick and easy recipe for dinner. Kathal is a rich source of dietary fiber and vitamin B6. It's very popular in southern part of India. Ripe jackfruit can be eaten without cooking and is widely sold as chips.
Tomatoes : 1 cup
Onion : 1 cup
Curd : 1 small bowl
Ginger-Garlic paste: 2 tsp.
Red chilli powder : 2 tsp.
Turmeric powder : 1 tsp.
Coriander powder : 2 tsp.
Salt : To taste
Oil : 4-5 tbsp.
Whole spices (cumin, black pepper, black cardamom, cinnamon, cloves, bay leaf): For tempering
Water : 1/4 cup
2. Mix Kathal into this paste and let it rest for 15 minutes.
3. Heat oil in a pressure cooker then add whole spices.
4. When started to crackle, add ginger-garlic paste and sauté for few seconds.
5. Add chopped onions and sauté till golden brown.
6. Add tomatoes and cook till it tenders.
7. Add the curd-kathal mixture, pour some water, mix well and pressure cook for 10-15 minutes.
8. Serve hot with rice or chapati (Indian flatbread).
